Grilled Chicken Salad


4 Cup chopped lettuce
4 oz Canned Corn( rinsed and drained)
1/4 cup diced red onion( 1/2 small red onion)
1/4 cup diced red pepper
1/4 cup diced green pepper
1 grilled chicken breast(shredded)
1 lemon squeezed
3 tbs olive oil
1 tsp cumin
1 tsp paprika
salt & pepper
Tossed all together and serve with 1 whole wheat roll

The 5 minute Breakfast


1 Slice Whole Wheat Bread
1 cup low fat yogurt
1 cup strawberries sliced, blueberries and raspberries
1 tbs Walnuts or Almonds (optional)
1 tsp Vanilla extract

Mix all the ingredients except the bread
Toast the bread and serve with the yogurt mix

Chicken salad


1 cup chpped romanian lettus
1 chopped tomato
1 half cup green onions
1/2 cup chopped celery
1 cup chopped cucumbers
1/2 cup lemon juice
3Tbs Olive oil
1 chopped roasted chicken
Salt
1 Tbs peprica

Add every thing together and tossed together

Hummus Dip


1 Can of Gonzola beans or Chickpeas
6 cloves of garlic, peeled and minced
2 tbs sesame paste (Tahini)
1/2 tbs non-fat plain yogurt
1 squeezed lemon
2 tbs extra-virgin olive oil
salt

Take all the ingredients in a blender, and push puree until all the ingredients are incorparated with a smooth texture. Serve on a plate with extra-virgin olive oil

I read about squash that they are tasty, tender, and low-cal. The are loaded with lutien and zeexanthin, antioxidants that may prevent loosing of you sight

Squash Saute'



2 lb squash or zucchini thinly slices (you can use frozen bag)
2 Tbs extra virgin olive oil
1 16 oz frozen bag (mixed pepper) or fresh green, yellow and red pepper
1 medium onion chopped
4 Cloves garlic, sliced or smashed
salt & pepper
1tsp turmeric
Heat garlic, oil, chopped onion, and garlic in a large skillet over medium heat until onions turn golden.
Add squash, turmeric, and salt. Toss to coat, and cook for 10 min. stirring occasionally.
Add the mixed pepper and stir for 5 more minuets longer.
Serve it with white or brown rice. You could have corn bread with it instead of the rice.

Back-to-School Cooking


Sloppy Joe:
1 Pound lean ground beef
1 Can (16 oz) of tomato sauce
1 Medium onion chopped
2 table spoon olive oil
1 spoon black pepper
salt
1 table spoon HP steak sauce
6 buns


In skillet add olive oil and chopped onion stir for 5 minuts.
Add ground beef, black pepper, salt and hp sause, stir until brown
Add tomato sauce and mix it very well for 3 minutes. Turn it off
Serve with the buns
